A rich, creamy, and high-protein red lentil curry infused with aromatic spices, coconut milk, and cashew butter for ultimate flavor.

Ingredients

1 tbsp coconut oil
1 onion, finely diced
1.5 garlic cloves, minced
1 medium carrot, finely diced
1 cup crushed tomatoes (tinned)
1 cup red lentils, uncooked
2 cups vegetable broth
1 cup coconut milk
1.5 tbsp cashew butter
0.5 tbsp lemon juice
0.5 tsp ginger paste
2 tsp curry powder
salt to taste
0.5 tsp ground cumin
0.5 tsp garam masala
0.5 tsp turmeric
chili powder to taste

Instructions

  1. Heat coconut oil in a deep skillet over medium heat.
  2. Sauté minced garlic, diced onion, and ginger paste until fragrant.
  3. Add salt and all dry spices to the pan, sautéing for 1-2 minutes while stirring frequently.
  4. Pour in the vegetable broth, uncooked lentils, carrots, and crushed tomatoes.
  5. Cover and simmer for 20-25 minutes until lentils are tender.
  6. Stir in the coconut milk, cashew butter, and lemon juice.
  7. Simmer uncovered for an additional 5-10 minutes to thicken.
  8. Adjust seasoning and serve warm.

Notes

  • Use red lentils for the best creamy texture.
  • If the curry gets too thick during simmering, add extra broth.
