A crispy, satisfying vegan copycat of a fast-food classic, packed with seasoned beans, rice, veggies, and melty vegan cheese.

Ingredients

4 large whole wheat burrito tortillas
small tortillas (corn or flour, cut into quarters)
15 ounces black beans, rinsed and drained
1 cup vegan nacho cheese sauce
2 jalapeños, thinly sliced
1 cup cooked brown rice (cooled)
2 ripe avocados, sliced
1 cup grape tomatoes, diced
1 small yellow onion, finely diced
tablespoon olive oil
1/2 teaspoon cumin
1/2 teaspoon chili powder
1/4 teaspoon garlic powder
Salt and black pepper to taste

Instructions

  1. Prepare bean mixture with spices.
  2. sauté diced onion.
  3. Layer rice, beans, cheese, onions, jalapeños, avocado, and tomatoes on a large tortilla.
  4. Add a small tortilla quarter for crunch.
  5. Fold edges into a hexagon and press to seal.
  6. Cook in a skillet over medium-low heat for 5-7 minutes per side until golden brown.
  7. Keep warm in oven and serve immediately.
