A high-protein, low-sugar version of the classic rice krispie treat using dark chocolate and whey protein.

Ingredients

2 cups (50 g) crispy rice cereal
1/3 cup (30 g) vanilla whey protein powder
6 oz (170 g) dark chocolate chunks

Instructions

  1. Line a 6-inch square baking dish with parchment paper and set aside.
  2. In a large bowl, combine the crispy rice cereal with the protein powder and stir until evenly combined.
  3. Melt the dark chocolate in a microwave-safe bowl in 30-second intervals, stirring each time until smooth.
  4. Pour the melted chocolate into the cereal mixture and stir until everything is evenly coated.
  5. Transfer the mixture to the baking dish and press down gently with your fingertips.
  6. Refrigerate for at least one hour until set, then cut into 12 squares.

Notes

  • Use refined coconut oil if your chocolate is too thick while melting.
  • Store in the fridge to maintain the best texture.
