Crispy, baked cauliflower florets coated in a spicy, tangy buffalo sauce. A perfect healthy and vegan alternative to traditional wings, served with dairy-free ranch.

Ingredients

1 small cauliflower (cut into small bite sized florets)
1/2 cup brown rice flour (or flour of choice)
1 teaspoon garlic powder
1 teaspoon onion powder
1.5 teaspoon paprika
1/2 teaspoon cumin
1/2 teaspoon sea salt
1/4 teaspoon black pepper
1/4 teaspoon cayenne pepper
3/4 cup unsweetened cashew milk (or milk of choice)
1/2 cup water
1/4 cup white vinegar
1 teaspoon paprika
1 teaspoon garlic powder
1/4 teaspoon cayenne pepper
1/2 teaspoon sea salt
3 tablespoon tomato paste
1 recipe dairy free ranch dressing

Instructions

  1. If making homemade ranch, soak cashews and prepare sauce first. Refrigerate.
  2. Preheat oven to 450°F. Line a baking tray with parchment paper.
  3. Place cauliflower florets in a large bowl. In another bowl, mix flour and seasonings. Add milk and water to form a batter.
  4. Pour batter over cauliflower and mix to coat evenly.
  5. Arrange coated cauliflower on tray in a single layer. Bake for 20 minutes, flipping halfway.
  6. While cauliflower bakes, make buffalo sauce: Combine all sauce ingredients in a small saucepan. Simmer for 3-5 minutes, whisking.
  7. Remove cauliflower from oven. Brush generously with buffalo sauce.
  8. Return to oven for 10-15 more minutes, flipping once.
  9. Serve hot with dairy-free ranch dressing.

Notes

  • For crispier results, ensure florets are not overcrowded on the baking tray.
  • Adjust cayenne pepper in the sauce to control spice level.
  • Reheat leftovers in the oven or air fryer to maintain crispness.
