A quick and healthy high-protein snack made with only three main ingredients: ripe bananas, oats, and nut butter. Perfect for sugar-free diets and meal prepping.

2 ripe bananas (8 oz / 225g)
1/4 cup (60g) peanut butter or almond butter
1.5 cups (150g) rolled oats
1/2 cup (50g) protein powder
2 to 4 tbsp maple syrup (optional)
1 tsp vanilla extract
1 pinch salt

Instructions

  1. Preheat oven to 350°F (180°C) and line a 7×7 inch pan with parchment paper.
  2. Mash bananas in a large bowl. Stir in nut butter, vanilla, and salt until smooth.
  3. Add rolled oats and protein powder. Mix until fully combined. Add a splash of milk if too dry.
  4. Spread mixture into the pan and press down firmly.
  5. Bake for 17-20 minutes until the center is set.
  6. Cool completely before slicing into 6 bars.

Notes

  • Use very spotty bananas for best sweetness.
  • Substitute protein powder with more oats if preferred.
  • Ensure nut butter is the runny, natural kind.
